For the 2006 “Maven” the Syrah was fermented in new French open top 400 L puncheons. Roughly 25% whole clusters were placed in the barrel and destemmed whole berries filled the balance. Following 7 days of cold maceration and 18 days of fermentation the Syrah was basket pressed and transferred to new and once used French barrels. This vacates the seasoned puncheons for the Grenache. The Grenache was destemmed to small open top fermentors where it underwent approximately 7 days of cold maceration followed by roughly two weeks of fermentation on skins. The Grenache was then basket pressed and transferred to puncheons seasoned by a single Syrah fermentation. The fermentation finished in barrel late December. The wine was racked once for blending in July and returned to barrel until bottled unfined and unfiltered February 2008. 65 cases produced. $65
