Akasha 2006

The 2006 Torrin Akasha is 100% Syrah. The blend consists of 80% Syrah from an incredibly rocky north facing slope on our estate vineyard and 20% Syrah from the acclaimed James Berry Vineyard. Our Syrah consists of about 25% whole cluster and the balance destemmed whole berries fermented in a combination of small open top fermentors and open top puncheons. Cold maceration lasts roughly 7 days or until native yeast initiate fermentation. If the wine is clean we let the natives continue to do their job. If ethyl acetate aromas linger we inoculate with stronger cultured yeast. The fermentation last roughly 16 to 20 days and is basket pressed at dryness. The wine was transferred to 75% new French oak barrels and 25% once used barrels. Racked mid July for blending, the wine was returned to barrel until bottling unfined and unfiltered February 2008. 80 cases produced. $60.00
